Cuisine

Feijoada, the national dish, is a meat and black bean stew, although it has many regional variants.
In
Salvador, the cuisine has an African flavour: chillies, spices and the tasty dendê (palm) oil. Moqueca, a sort of sauce or stew, is a fish-based Bahia specialty. Acarajé, made of beans, fried in palm oil and filled with vatapa (dry shrimp, chillies and tomatoes), is sold by the Bahianese at street corners. Bahianese specialties are often based on coconut milk, palm oil, coriander and chillies.

Tourism in Bahia

Bahia is Brazil’s most “Africanised” state. Its capital, Salvador, is a fascinating and vibrant city, with a number of historic buildings. It is one of Brazil’s cultural centres. The city is divided into two parts: the cidade alta or upper city and the cidade baixa or lower city, which are linked by the famous elevator lacerda (electric elevator).

-          Pelourinho: It is the biggest baroque, colonial architectural complex in Latin America as a whole, listed as a UNESCO World Heritage Site.

-          Basilica Cathedral: The biggest church in Pelourinho, built between 1657 and 1672, with marble blocks used to ballast Portuguese ships returning empty from Europe.

-          Notre Dame de Bonfim: The most popular of Bahia State’s churches, built on a hill in the mid-18th century. In January, Catholic priests and Candomblé priestesses rub shoulders in the Bonfim procession in a typically Bahianese ritual.

-          The Sao Francisco Convent and Church: The convent stands testimony to Salvador’s Golden Age, with its interiors, richly decorated in paintings and its gold-leaf ornamented sculptures.

-          Mercado Modelo: This covered market, a picturesque part of Salvador, formerly a customs building, harbours a number of artisans, restaurants and several bars.

-          The Capoeira: This dance originated in tribal wars and African music and dance. The accompanying music is related to that of the Candomblé. The main instrument is the berimbau, composed of a wooden arc stretched tight with an iron wire and a calabash used as a sounding box.

-          Salvador is Brazil’s spiritual centre, but if you prefer fine sand beaches, you will be spoilt for choice: Itapoã, Flamengo or Stella Maris for surfers and Placafor or Porto da Barra for swimming.

Shopping
Handicrafts vary greatly from region to region. You will find pottery, lace, hammocks, wooden sculptures, cigars, bottles filled with coloured sand, geodes, semi-precious stones, soapstone objects, saddles and leather.
